Howdy!
My plum tomatoes are just coming ripe, and I wanted to use a couple of them at lunch today.
I had no fresh greens, but did have frozen chopped spinach. On a whim, or inspiration, I did the following.
1. Microwaved about a cup of spinach for 60 seconds.
2. Added the sliced tomatoes and zapped for 30 seconds more.
3. Added a handful of chopped walnuts and a small bunch of chopped basil, also from my garden, and zapped another 30 seconds.
4. I added just a teaspoon or so of a fat free balsamic vinaigrette dressing.
Voila - lunch in a bowl with almost no effort.

That's a nice little lunch! I would add feta too, because I'm obsessed! :)
Thanks, Mary. No feta for me, been vegan for a little over a year now, but I'll bet it would taste great with these other things!
