Happy Easter to those who celebrate.
Mesquite pancakes are my latest favorite southwestern food. Served with vegan "butter" and real maple syrup makes for one tasty Easter breakfast. I'm in heaven!
Here's the recipe in case you are interested:
.5 C mesquite flour
.5 C corn meal (organic)
.5 C whole wheat flour
.5 tsp. salt
.5 tsp baking powder (or baking soda)
cinnamon and nutmeg to your liking
Mix all above in bowl.
Add your favorite milk to desired consistency (I used rice milk today, sometimes almond or soy) stirring it in a little at a time.
Proceed to cook as any other pancakes.
I sometimes add vegan chocolate chips for an extra yummy treat!
