Saved by the Casserole - 2013-237

I tried making vegan raw eggplant "bacon". I screwed up and it stuck to the pans badly. (although considered "raw" it did cook in the oven at about 165F because I don't own a dehydrator.)

So I used the rest of the eggplant and marinade, some tomato, onion, garlic, chickpeas, and spices to make a baked dish. This came out quite tasty.
